Luncheon
This luncheon is basically a live or die situation according to me as the director of the operation. With the President of the Dominican Republic and 300 guests macrocosm on the list of attendees, this is a very important and gingerly event. Everything leave need to be transported as there is no electricity, poseing, tables, anything. This is a challenge.
Menu
1) Appetizer: Prosciutto, 14 on a habitation per table.
2) Entrée: Grilled Chicken marinated in cumin, coriander and garlic mix with balsamic vinegar. Side item can be chosen from either, green beans or corn. President automatically gets both.
3) sweetness: Red Velvet Whoopie Pies
4) Beverages: Water (Still and Sparkling), Ginger Beer (a cultured darling for the Dominican Republic)
Preparation
The prosciutto will be prepared in the kitchen at the school first. The topping that goes onto the bread will be stored in Tupperware stored in a ice chest filled with ice to nutriment cool until served. The mini pieces of bread will be cooled as well. The chicken will be marinated over night so the sauce seeps in the chicken for a nice sloshed taste. The chicken will be grilled one bit before arrival of guests and stored in aluminum trays with mini torches on a lower floor filled with enough liquid to light them and keep them crank and at temperature. The side items same as well.
The sweetness will be baked the morning of and stored in a cooler in the refrigerator until departure to the event, where they will stay in a cooler to stay cool. The beverages will be transported in an ice cooler.

* Table for serving drinks and dessert: 30 ft. x 6 ft.
* Larger spoons for serving the sides at the tables
